![]() INGREDIENTS 2 garlic cloves, finely chopped 2 zucchini 1 eggplant 1 red pepper 1 red onion 1t Curry Powder 1t Turmeric Powder 1t Sea Salt 1t Cumin 1c Organic Pasta Sauce 1 Avocado, sliced or cubed DIRECTIONS Chop garlic Rough chop all vegetables to about 1" pieces and place in pot. Place spaghetti sauce in pot with veggies and all the spices. Set on MANUAL for 5 minutes. Release steam immediately. Enjoy with rice, quinoa and/or avocado cubes. STOVETOP INSTRUCTIONS If you cook on the stove, cook for a little longer until the veggies are cooked but still crunchy but not mushy.
